Bún bò Nam Bộ
A noodle bowl with stir-fried beef, herbs and dressing rather than a large quantity of soup broth. The southern reference in its name does not establish an origin: this name is especially familiar in Hanoi.

What goes into it?
Rice vermicelli, beef, garlic, vegetables, herbs, peanuts, fried shallots and fish-sauce dressing.
What does it taste like?
Savory, fresh and nutty; warm beef contrasts with herbs and vegetables.
How it is served
Mix the dressing through the whole bowl to season the noodles underneath.
Ordering tips
In the south a similar dish may be called bún bò xào. Ask whether the marinade contains oyster sauce.
